(It's Not Spinach, but Could Be) Kale + Corn Margarita Pizza
Yes, we know. Kale is not spinach. But it is (almost) equally as tasty and works as a great spinach substitute for those days when you run out of spinach, or when you feel like switching up your greens, or when your roommates who don't quite understand your obsession with spinach (we understand) demand that you buy new ingredients.

Melon + Prosciutto +Cherry Spinach Salad
This salad was experimental. And the results were pretty decent. There are a few things we'd do differently next time, but overall it was a good summery light salad. I like watermelon+balsamic in combo so we tried adding in other things. Like rainier cherries. And prosciutto (why is that so hard to spell?). For people who like complicated + interesting taste, this is a winner. For people who like vanilla only, this may not be so good. So if you like your salads to keep you on your toes...read on.

pesto chicken on honey wheat Baguette
This is a simple and yum and healthy sandwich that you can put together in the evening, keep in your fridge, and heat up at work the next day (what I did). Your office will smell like fresh pesto and your coworkers will be jealous. It will only take you 5 minutes to make so you'll probably be wanting to make it more often. If you don't like cold cuts, you can substitute with slices of grilled chicken instead. This recipe calls for zero measuring -- so long as you can fit it all in your sandwich.

Second of all, here is why YOU should start eating spinach. All. The. Time. (Like we do). It doesn't just TASTE good, but it is also good for you. This is probably the most awesome thing about spinach. It would be like chocolate chip cookies that made people healthier. Those don't exist. But healthy spinach does.
