Mango + Sweet (Raw) Corn Spinach Salad w/ Citrus Honey Dressing

This salad is light and summery and a good dinner idea for days when you ate too much for lunch (like I did). The citrus dressing and mango make it sweet while the corn adds a subtle crunch and fresh raw veggie flavor. If you aren't a fan of mango then you can also use mandarin oranges.

You Will Need:

1. One ripe mango

2. One tbs. honey

3. One ear of corn (raw)

4. Half a lemon

5. A small wedge of onion

6. Baby spinach

7. One tbs. light olive or veggie oil

To prep, cut up the mango into small bit sized cubes. Then mince the wedge of onion -- I used red onion, but any onion will be fine. Then cut the raw corn off of the cob. Mix together and then sprinkle over bed of baby spinach.

For the dressing, mix equal parts of honey, fresh squeezed lemon juice and veggie oil. If you want it less sweet, just go easier on the honey. Whip all together and then pour over salad before serving. To make it more uniform, you can also chop up the spinach leaves a bit to make more of a chop salad. Either way is yum.
