Crustless Cheddar Chicken Spinach Quiche


This is the spinach recipe that got away...

Onto my other blog. I actually made this quiche before Spinach Blog was ever born, but never got around to posting it until today. It's your basic spinachy, cheesy, eggy quiche. It taste good, of course, because there is spinach in it. And there's not much else to say.

You will need:

1 ten oz. pack chopped frozen spinach
1 c. sharp shredded cheddar cheese (more or less)
1 small to medium sized onion, chopped
1/2 tsp garlic, minced
1-2 small to medium chicken breasts
4 eggs
olive oil and/or butter
salt and pepper to taste
